Grape varieties: Chardonnay (60 %) will give elegance and complexity and will allow the ageing in cellar. Aligoté (40 %) brings freshness and a distinctive crispy taste.
Characteristics:
- Very fine and persistent foam, smart « cordon ».
- Smell: citrus aromas, nuts, toasted.
- Balanced mouth.
- Very good length.
Serving: Serve at 6 - 8°C, as an aperitif or for cocktails; a very good accompaniment to oysters and seafood.
